Fall Soup Round-Up

Our top 5 favorite soups and stews to keep you toasty and cozy this fall

As soon as the leaves start to turn, everyone is screaming pumpkin. Pumpkin lattes, pumpkin ice cream, pumpkin, soup...


So while pumpkin soup is deLISH, we're rounding up our top 5 favorite soups to get you through the fall (and winter!).


Meal tip: double or triple your recipe and freeze leftovers in jars or tupperware for easy week night ,eals.

1. Detoxinista's Lentil, Kale and Quinoa Stew (vegan)

This is one of our go to soups, especially for when we feel like we need a more cleansing meal. It's packed with protein, fiber, and veggies. You can eat it solo, with some crusty bread, or scoop some over rice.


2. Cookie and Kate's Vegetarian Chili (vegetarian)

This easy chili has a lot going for it. It's super easy to make, it's easy to clean up, and you can use it as a base for all your family's different preferences. Here are some ideas:

  • Serve with cornbread (I used this mix)

  • Drizzle with high-quality olive oil and eat with crusty bread for a more mediterranean version

  • Serve with toppings like sliced avocado, cheese, sour cream and olives

  • Tweak the recipe and add some ground beef or turkey for added protein

  • Add some hot sauce

There are so many different options for this one!


3. Chicken Rice Soup

I'll confess, we don't usually make chicken soup unless we've eaten a roast chicken the night before or have leftover chicken. But when we do make it, this one tastes just like your grandma's chicken soup (if she made it, that is). It's an easy recipe, and you can always throw in extra veggies if you'd like.


4. Carrot Ginger Soup (vegan)

Fall may be all about pumpkins, but carrots and other root vegetables have a starring role too! This recipe has only 7 ingredients and no creams despite its insane creaminess (thank you, pureed carrots).


5. Pumpkin Soup (paleo)

I couldn't do a fall soup round-up without including a pumpkin soup, now could I? This one's for my paleo lovers out there (but honestly for anyone because it's so damn delicious!). All you need for this one (besides the ingredients), is a blender and a pan, and you're good to go! Try sprinkling with chopped chives for a different twist.
