Why Muffins Are Key to Meal Prep


All jokes aside, if you follow my IG stories @dimityps or @nolananddimity, you'll know I love making muffins as part of my meal prep routine. I always double the recipe and use the huge muffin tin that Nolan bought last year (and I almost made him return - gasp!).


Why? Three reasons:

  1. There is so much variation when it comes to muffins. You can play with the flavors, texture, and ingredients. You can make them paleo, gluten-free, keto, sweet, savory...you get the point! The sky is the limit.

  2. They are great for breakfast on the go -- especially those mornings where you're rushing to get to school or work on time -- and as healthy, filling snacks.

  3. They're fairly easy to make. For someone who isn't a natural baker, muffins are the perfect thing to make. Prep and clean-up are pretty minimal (two bowls and some measuring cups or spoons), there usually aren't too many ingredients, and they cook quickly (perfect if you want that instant gratification).


So, without further ado, I've rounded up my favorite muffin recipes for you to try when you meal prep. A little something for everyone.

Whole Wheat Blueberry Muffins (egg-free)

Blueberry muffins are a go-to in our fam, but these ones are the best (probably because I used actual sugar and not maple syrup or honey!). They're egg-free for anyone with allergies, and the whole wheat flour and yogurt give these a little more substance. Unlike most whole wheat baked goods, these are moist and delicious.


Morning Glory Muffins (paleo)

Morning Glory Muffins always remind me of fall mornings visiting my sister in the Fall Creek neighborhood of Ithaca, NY. Her apartment was walking distance to the Cayuga Street location of Gimme Coffee. I would walk there with my oldest son (then a toddler) before anyone else was awake. I'd order a much-needed coffee for me and a warm morning glory muffin for us to share.


I love pretty much all of Paleo Running Momma's recipes, but this one is special. The addition of orange zest and fresh orange really adds a little something extra, and you can eat them truly guilt-free. Try them toasted with some ghee butter!


Healthy Pumpkin Chocolate Chip Muffins

One of my dearest and oldest friends, Katie (owner of the cutest shop The Post Supply), used to make the BEST pumpkin chocolate chip muffins in high school. I remember always thinking she was so grown up baking when I had no idea how and I literally couldn't wait to eat them.


While this isn't her recipe, it's hard to go wrong when pumpkin and chocolate are your two key ingredients. These ones are definitely on the healthy side, so feel free to add a little more maple syrup if you like them sweeter!


Loaded Savory Breakfast Muffins

Muffins doesn't have to be sweet, and this ones loaded with everything you need to power you through your day, including spinach, sausage, cheese and even some apples.


If you're someone who wakes up early and eats breakfast on the go - these ones are for you!


Applesauce Muffins (vegan/keto)

After picking apples in the fall, we love making an array of apple-themed meals and desserts, like apple crisp, applesauce, and these delicious, vegan applesauce muffins! Just be sure to use a nut milk to make them compeletely vegan, and she even has suggestions for how to make these keto. Enjoy!
